Is your parsley growing like crazy at the moment? Don’t worry you can freeze and dry them!
Freezing your parsley is easy, all you have to do is wash the leave and dry them with a paper towel, chop them to your liking and then pop them into a freezer bag or container. Frozen parsley will be fine for a few months. If you’d like, chop them up and freeze them in ice block trays, makes it easier to pop out and use while you’re cooking, rather than as a garnish.
Drying your parsley
There are multiple ways of doing this, you can either; microwave, oven, sundry, dehydrate them or air-dry them. Follow the steps below for each method (PS, this works for all herbs, not just parsley).
Drying parsley in the Microwave
- Cover a plate with a paper towel
- Wash your parsley
- Place the parsley on the towel but don’t overlap them
- Place another towel over the parsley
- Change the power level on your microwave to high and nuke for 20 seconds. If there is still moisture left nuke for another 20, keep going until the parsley feels dry to the touch
Drying parsley in the Oven
- Set your oven to the lowest setting
- Wash parsley
- Finely chop your parsley
- Blanch the leaves for about 30 seconds then rinse with cold water
- Cover a tray with baking paper and evenly lay the parsley on the paper
- Keep the parsley in the oven for about 4 hours, check it every 30- 40 mins
- When the parsley crumbles it’s ready
- Crush your parsley and store in an airtight jar
Sun-drying your parsley
- Make sure it’s a warm sunny day
- If you have any old window screens laying around, wipe them down and over with baking paper
- Cut stems off parsley but leave enough to be able to turn your leaves over
- Place the screens in the sun and turn over every 1-2 hours so that they dry evenly
Air-drying your parsley
- Bunch up your parsley and tie the stems with a rubber band
- Hang them upside down in your garage or clothing rack and place in any area that is warm and dry
- They should be dry in a couple of weeks, the leaves should be crumbly to the touch
- Once dried, cover them with baking paper and crumble them up
- Store in airtight jar or container
